Tommy Pollio
Executive Chef / Co-Owner

Tommy Pollio was born and raised in Denville and developed a passion for cooking while working at Sergio and Co. as a teeneger. He expanded his formative knowledge by completing the culinary arts program at Morris County Vo-Tech, and working as a line cook in Morristown.

After graduating, Tommy spent the next 15 plus years honing his skills in the kitchen by working around the country in many incredible restaurants. His travels include working and living in North Carolina, Los Angeles, San Francisco, and Chicago.

​His dream was to share his craft and expertise with his hometown. This has been the foundation and inspiration for The Pasta Shop.


Sergio Sciancalepore (pronounced Shank-la-por)

Sergio grew up in an Italian household in Secaucus, NJ. Raised by Italian immigrant parents, he was brought up working in their specialty stores in Jersey City and Lyndhurst.

Here he learned the art of making mozzarella, learning family recipes, and helping customers. Sergio spent years working in wholesale Italian provisions, continuing to learn and expand his product knowledge.

​In 1999 he opened his own store in Denville called Sergio & Co and has truly left a huge impact on the community. The hallmarks have become his famous mozzarella, the huge sandwiches, and Sergio’s kind and generous spirit for over 20 years.
