Tommy PollioExecutive Chef / Co-OwnerTommy Pollio was born and raised in Denville and developed a passion for cooking while working at Sergio and Co. as a teeneger. He expanded his formative knowledge by completing the culinary arts program at Morris County Vo-Tech, and working as a line cook in Morristown.
After graduating, Tommy spent the next 15 plus years honing his skills in the kitchen by working around the country in many incredible restaurants. His travels include working and living in North Carolina, Los Angeles, San Francisco, and Chicago. His dream was to share his craft and expertise with his hometown. This has been the foundation and inspiration for The Pasta Shop. |
